Panner Butter Masala

Ingredients:

250 gm of panner, cut into 2" cubes
2 tbsp oil
2 tbsp butter
1 onion, chopped
¼ tsp cinnamon
1 bay leave
1 tsp garlic paste
1 tsp ginger paste
1 tsp chilli powder
2 tbsp cashew paste
2 whole peeled tomatoes
1 tbsp natural yogurt
1 cup fresh cream(optional)
1/2 tsp garam masala(optional)
chopped coriander for garnishing
salt to taste

Method:

Using a large frying pan, heat the oil and add the panner.Fry it for 3-4 minutes until it turns a golden-brown colour.Take the panner out of the frying pan and put it aside in cold water.It prevents panner from becoming hard.Use the same frying pan to melt the butter.Now add the bay leave,finely chopped onion and cinnamon and fry together in the pan until onions become transparent.At this point add the garlic & ginger paste, turmeric, chilli powder, cashew paste, tomato puree and the whole yogurt. Stir all of the ingredients together and mix thoroughly.Bring the ingredients to a boil and stir for 4-5 minutes. Season with salt and pepper to taste.Put the paneer back into the pan and combine with the other ingredients.switch off the flame.Add fresh cream and garam masala to it.To compliment the dish, add the chopped coriander.
